This sandwich feels like spring in every bite. I first made it after a farmer’s market run—arms full of greens, sunshine on my face. With creamy hummus, rich avocado, and layers of turkey and pesto on sourdough, it’s wholesome, vibrant, and incredibly satisfying. It’s the kind of sandwich that makes you feel good inside and out.

2 slices sourdough bread
1 tbsp hummus
2 tsp pesto
¼ avocado, mashed
3–4 slices turkey breast
4 cucumber slices
A handful each of arugula and lettuce
Instructions
Toast the bread lightly if desired.
Spread hummus on one slice and pesto on the other.
Add mashed avocado, then layer turkey, cucumbers, lettuce, and arugula.
Press gently, slice in half, and serve fresh.
