Ingredients

  • 1 lb chicken breast, cut into cubes

  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • Skewers (wooden or metal)

Instructions

  1. Make the marinade: In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until smooth.
  2. Prep the chicken: Cut into bite-sized cubes and toss in the marinade, coating well. Marinate in the fridge for 30 minutes to 3 hours.
  3. Chop your veggies: Cut the bell peppers and onion into similar-sized chunks for an appealing presentation.
  4. Skewer it up: Assemble the kabobs by alternating chicken, bell peppers, and onion on the skewers.
  5. Preheat the grill or oven: Heat the grill to medium-high or set the oven to 400°F (200°C).
  6. Cook the kabobs: Grill for about 4–5 minutes on each side or bake for 15-20 minutes until chicken reaches 165°F (75°C).
  7. Let them rest for a couple of minutes before serving.
