Ingredients

For the Bowls:

1 lb ground beef

1 tbsp olive oil

2 garlic cloves, minced

1 tsp dried oregano

Salt & pepper to taste

1½ cups cooked orzo

1 cup cherry tomatoes, halved

1 cup chopped cucumber

½ red onion, thinly sliced

½ cup crumbled feta

2 tbsp fresh parsley or dill (optional)

Lemon-Tahini Dressing:

¼ cup tahini

Juice of 1 lemon

1 tbsp olive oil

1 garlic clove, grated

24 tbsp water (to thin)

Salt to taste


Instructions

Heat olive oil in a skillet, sauté garlic, then add beef and oregano. Cook until browned; season with salt and pepper.

Whisk together tahini, lemon juice, oil, garlic, salt, and water until creamy.

Layer bowls with a base of orzo, followed by beef, tomatoes, cucumber, red onion, and feta.

Drizzle with lemon-tahini dressing and garnish with herbs.
