  • 2 boneless, skinless chicken breasts

Instructions

  1. Prepare the Garlic Butter: In a small bowl, combine your softened butter, minced garlic, dried Italian herbs, a pinch of salt, and red pepper flakes if using. Mix well until all the ingredients are incorporated.
  2. Season and Cook the Chicken: Pat your chicken breasts dry with a paper towel and season both sides generously with salt and black pepper. Heat your skillet over medium-high heat and add a drizzle of olive oil. Place the chicken breasts in the pan and cook for about 6-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F.
  3. Toast the Bread: Spread a layer of garlic butter on one side of each slice of bread. In a skillet or griddle over medium heat, place the slices butter-side down and toast until golden brown and crispy—about 2-3 minutes.
  4. Assemble the Sandwich: Once the chicken is cooked, let it rest for a minute before slicing it against the grain into thin strips. Start with a slice of toasted bread (butter side up), layer on the leafy greens, then add the tomato slices, followed by the sliced grilled chicken. If adding cheese or avocado, do so now, and top with a second slice of toasted bread.
