- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup (1 stick) unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped parsley (optional, for garnish)
- 1/2 cup chicken broth
Instructions
- Prep your veggies: Wash the potatoes and carrots, cutting the potatoes into quarters and the carrots into chunks.
- Layer the base in the crockpot: Place the quartered potatoes and carrot chunks at the bottom of the crockpot.
- Season the chicken: In a bowl, mix melted butter, minced garlic, Italian seasoning, salt, and black pepper. Place chicken on top of the veggies and pour the mixture over it.
- Add the broth: Pour chicken broth around the chicken and veggies.
- Set it and forget it: Cover the crockpot, set it to low, and cook for about 6 hours.
- Check for doneness: The chicken should be tender and fully cooked after 6 hours.
- Serve it up: Shred the chicken if desired and serve with veggies, drizzling some buttery broth over it.
