A simple and comforting garlic butter chicken dish that cooks effortlessly in a crockpot, infused with flavors from garlic, butter, and veggies.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Prep your veggies: Wash the potatoes and carrots, cutting the potatoes into quarters and the carrots into chunks.
  2. Layer the base in the crockpot: Place the quartered potatoes and carrot chunks at the bottom of the crockpot.
  3. Season the chicken: In a bowl, mix melted butter, minced garlic, Italian seasoning, salt, and black pepper. Place chicken on top of the veggies and pour the mixture over it.
  4. Add the broth: Pour chicken broth around the chicken and veggies.
  5. Set it and forget it: Cover the crockpot, set it to low, and cook for about 6 hours.
  6. Check for doneness: The chicken should be tender and fully cooked after 6 hours.
  7. Serve it up: Shred the chicken if desired and serve with veggies, drizzling some buttery broth over it.
