Description

A vibrant and refreshing salad capturing the essence of California rolls with cucumbers, avocado, and crab.


Ingredients

  • 2 large cucumbers
  • 1 cup surimi (imitation crab) or real crab meat
  • 1 avocado, diced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers, peel if desired, cut in half lengthwise, scoop out seeds, and slice into half-moon shapes.
  2. In a small bowl, combine rice vinegar, soy sauce, and sesame oil, and whisk until combined.
  3. In a big mixing bowl, add sliced cucumbers, surimi or crab, diced avocado, and green onions, and gently toss to combine.
  4. Drizzle dressing over the salad, toss gently to coat, and add sesame seeds.
  5. Plate the salad, sprinkle with additional sesame seeds and green onions, and serve.

Notes

For best flavor, prepare the salad fresh and store components separately until ready to serve.
