A vibrant and refreshing salad capturing the essence of California rolls with cucumbers, avocado, and crab.
Ingredients

- 2 large cucumbers
- 1 cup surimi (imitation crab) or real crab meat
- 1 avocado, diced
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons sesame seeds
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
- Wash the cucumbers, peel if desired, cut in half lengthwise, scoop out seeds, and slice into half-moon shapes.
- In a small bowl, combine rice vinegar, soy sauce, and sesame oil, and whisk until combined.
- In a big mixing bowl, add sliced cucumbers, surimi or crab, diced avocado, and green onions, and gently toss to combine.
- Drizzle dressing over the salad, toss gently to coat, and add sesame seeds.
- Plate the salad, sprinkle with additional sesame seeds and green onions, and serve.
Notes
For best flavor, prepare the salad fresh and store components separately until ready to serve.
