Description

Spicy and crispy shrimp sliders with a refreshing slaw and spicy mayo, perfect for any gathering.


Ingredients

  • 1 pound medium or large shrimp, peeled and deveined
  • 1 cup panko bread crumbs
  • 2 large eggs, beaten
  • ½ cup all-purpose flour, seasoned
  • Spices: paprika, garlic powder, cayenne pepper
  • 12 soft slider rolls
  • 3 cups coleslaw mix
  • ½ cup mayonnaise
  • 2 tablespoons chili paste or Sriracha
  • Lettuce leaves

Instructions

  1. Prepare the shrimp by setting up a dredging station with three shallow dishes: one with seasoned flour, one for the beaten eggs, and one for the panko breadcrumbs.
  2. Dredge the shrimp by coating in the seasoned flour, then dipping in the egg before rolling in the panko breadcrumbs.
  3. Heat about 1 inch of vegetable or canola oil in a large skillet over medium heat.
  4. Fry the shrimp in batches for 2-3 minutes on each side until golden and crispy.
  5. Mix the mayonnaise with chili paste or Sriracha for the spicy mayo.
  6. Toss together the coleslaw mix with vinegar, salt, and pepper.
  7. Toast the slider rolls cut-side down in the same skillet until golden brown.
  8. Build the sliders by layering lettuce, shrimp, slaw, and spicy mayo on each roll.
  9. Top with the other half of the slide and serve immediately.

Notes

For extra crispy sliders, double-dip the shrimp in the egg and panko. Serve with extra spicy mayo for dipping.
