Spicy and crispy shrimp sliders with a refreshing slaw and spicy mayo, perfect for any gathering.

- 1 pound medium or large shrimp, peeled and deveined
- 1 cup panko bread crumbs
- 2 large eggs, beaten
- ½ cup all-purpose flour, seasoned
- Spices: paprika, garlic powder, cayenne pepper
- 12 soft slider rolls
- 3 cups coleslaw mix
- ½ cup mayonnaise
- 2 tablespoons chili paste or Sriracha
- Lettuce leaves
Instructions
- Prepare the shrimp by setting up a dredging station with three shallow dishes: one with seasoned flour, one for the beaten eggs, and one for the panko breadcrumbs.
- Dredge the shrimp by coating in the seasoned flour, then dipping in the egg before rolling in the panko breadcrumbs.
- Heat about 1 inch of vegetable or canola oil in a large skillet over medium heat.
- Fry the shrimp in batches for 2-3 minutes on each side until golden and crispy.
- Mix the mayonnaise with chili paste or Sriracha for the spicy mayo.
- Toss together the coleslaw mix with vinegar, salt, and pepper.
- Toast the slider rolls cut-side down in the same skillet until golden brown.
- Build the sliders by layering lettuce, shrimp, slaw, and spicy mayo on each roll.
- Top with the other half of the slide and serve immediately.
Notes
For extra crispy sliders, double-dip the shrimp in the egg and panko. Serve with extra spicy mayo for dipping.
