- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/2 cup milk
- 1/2 cup bell peppers, diced (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a muffin tin by greasing it or using silicone muffin cups.
- In a large mixing bowl, crack the eggs and whisk them with milk, salt, black pepper, and garlic powder until well blended.
- Stir in the chopped spinach and bell peppers, then gently fold in the crumbled feta cheese.
- Spoon the egg mixture evenly into each muffin cup, filling them about 2/3 full.
- Bake for 20-25 minutes or until the tops are set and lightly golden.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or enjoy later.
