  • Cooked Chicken
  • Enchilada Sauce
  • Cheese (Monterey Jack and sharp cheddar)
  • Onions

Instructions

  1. Prep Your Ingredients: Gather all your ingredients, shred the cooked chicken, and dice the onions.
  2. Sauté Onions: In a medium skillet, add olive oil and sauté diced onions for 3-4 minutes.
  3. Mix the Filling: Combine chicken, sautéed onions, cheese, salt, pepper, and spices in a large bowl.
  4. Prepare Your Baking Dish: Preheat oven to 375°F (190°C) and spread enchilada sauce on the bottom of a baking dish.
