Description

Ingredients

  • 12 ounces pasta (penne, rigatoni, or farfalle)
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, finely chopped
  • 34 garlic cloves, minced
  • 1/2 cup dry white wine or low-sodium chicken broth
  • 1 1/2 cups heavy cream or half-and-half
  • 3/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard (optional)
  • Zest and juice of 1 lemon
  • 1 teaspoon dried oregano or 1 tablespoon fresh chopped thyme
  • Salt and freshly cracked black pepper, to taste
  • 12 cups baby spinach or peas (optional)
  • Red pepper flakes (optional)

Instructions

  1. Bring the pasta water to a boil and salt it generously.
  2. Prep the chicken and season well.
  3. Sear the chicken.
  4. Sauté the aromatics.
  5. Deglaze the pan.
  6. Build the creamy sauce.
  7. Return the chicken and finish cooking.
  8. Toss with pasta and greens.
  9. Season and finish.
  10. Serve immediately.

Notes

Serve hot and garnish with extra lemon zest, chopped parsley, or basil. Pairs well with a crisp salad and wine.
