Ingredients

  • 1 cup of oats
  • 1/2 cup of almond flour
  • 1/2 cup of lean protein (protein powder or Greek yogurt)
  • 1/4 cup of honey or maple syrup
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/4 cup of melted coconut oil or butter
  • 1/2 cup of chopped nuts (optional)

Instructions

  1. Prepare the apples: Preheat your oven to 350°F (175°C). Peel, core, and slice the apples into thin wedges. Place them in a large mixing bowl and sprinkle with a bit of cinnamon.
  2. Mix the protein topping: In another bowl, combine the oats, almond flour, protein powder, remaining cinnamon, nutmeg, and melted coconut oil or butter. Stir until well mixed.
  3. Stir in your honey or maple syrup into the oat mixture.
  4. Spread the sliced apples evenly in a greased baking dish.
  5. Place the dish in the preheated oven and bake for about 30-35 minutes, or until the topping is golden brown and the apples are tender.
  6. Let your apple crisp cool for a few minutes to settle before serving.

Notes

For added protein, top with Greek yogurt or serve with a scoop of ice cream. Adjust baking time if doubling the recipe.
