  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the eggs and yogurt in a large bowl until smooth and frothy.
  3. Combine the baking powder, salt, xanthan gum, and almond flour in another bowl.
  4. Incorporate the dry mixture into the egg and yogurt blend, folding gently.
  5. Melt the butter or coconut oil and mix it into the batter.
  6. Pour the batter into a greased loaf pan and bake for 30-35 minutes.
  7. Cool the bread for 10 minutes in the pan, then transfer to a wire rack.
