3 cups thinly sliced cucumbers
1 small red or white onion, thinly sliced
½ cup white vinegar
¼ cup water
2 tbsp sugar (adjust to taste)
½ tsp salt
¼ tsp black pepper
Optional: fresh dill or parsley for garnish
Instructions
Slice Veggies: Thinly slice cucumbers and onion, and place in a large bowl.
Mix Dressing: In a separate bowl, whisk together vinegar, water, sugar, salt, and pepper until sugar dissolves.
Combine & Chill: Pour dressing over cucumbers and onions. Mix well and refrigerate for at least 1 hour.
Serve Cold: Garnish with fresh herbs if desired. Best served well chilled.
