- 4 medium zucchinis, sliced
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
- Italian seasoning (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchinis into about 1/4-inch rounds and sprinkle with salt; let sit for about 10 minutes.
- Add breadcrumbs to one bowl and mix with a pinch of salt and optional Italian seasoning; in another bowl, mix olive oil with the zucchini rounds.
- Dip each zucchini slice into the breadcrumb mixture and place on a baking sheet.
- Bake for about 15 minutes, flipping halfway, until golden brown.
- Assemble the dish by layering marinara sauce, half the zucchinis, half the mozzarella, and half the Parmesan in a greased baking dish. Repeat the layers.
- Bake again for 20-25 minutes until the cheese is bubbly and golden.
- Cool for a few moments, then serve.
Notes
Serve with fresh basil or parsley and a side salad for a complete meal.
