Description

A delicious and comforting dish that transforms zucchini into a crispy, cheesy masterpiece layered with marinara sauce.


Ingredients

  • 4 medium zucchinis, sliced
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Italian seasoning (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis into about 1/4-inch rounds and sprinkle with salt; let sit for about 10 minutes.
  3. Add breadcrumbs to one bowl and mix with a pinch of salt and optional Italian seasoning; in another bowl, mix olive oil with the zucchini rounds.
  4. Dip each zucchini slice into the breadcrumb mixture and place on a baking sheet.
  5. Bake for about 15 minutes, flipping halfway, until golden brown.
  6. Assemble the dish by layering marinara sauce, half the zucchinis, half the mozzarella, and half the Parmesan in a greased baking dish. Repeat the layers.
  7. Bake again for 20-25 minutes until the cheese is bubbly and golden.
  8. Cool for a few moments, then serve.

Notes

Serve with fresh basil or parsley and a side salad for a complete meal.
