Description

Ingredients

  • 2 medium zucchinis, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prep the Zucchini: Start by grating the zucchinis. Place the zucchinis in a clean kitchen towel and wring out the excess moisture.
  2. Mix the Ingredients: In a large bowl, combine grated zucchini, Parmesan cheese, mozzarella cheese, flour, egg, garlic, salt, and pepper. Stir until well incorporated.
  3. Heat the Oil: In a large skillet, heat oil over medium to medium-high heat. Ensure the oil is hot enough to sizzle the mixture.
  4. Fry the Fritters: Scoop about 2 tablespoons of the mixture and gently place it into the hot oil. Fry in batches of 3-4 for about 3-4 minutes per side until golden brown.
  5. Drain and Serve: Remove the fritters from the pan and place on a paper towel-lined plate to drain excess oil. Sprinkle with salt while hot.

Notes

Serve with sour cream or Greek yogurt. For a flavor twist, drizzle with balsamic reduction or homemade tzatziki.
