- 2 lbs Russet potatoes
- 1 head of garlic
- ½ cup unsalted butter
- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh chives or parsley for garnish
Instructions
- Peel and cube the potatoes, soak them in cold water for 30 minutes.
- Preheat the oven to 375°F (190°C) and roast the garlic for 30-35 minutes until soft.
- Boil the potatoes in salted water for 15-20 minutes until fork-tender.
- Drain the potatoes and mash them until creamy.
- Mix in the butter and cream, adjusting seasoning as needed.
- Add the roasted garlic and mix until combined.
- Serve garnished with fresh chives or parsley.
