- 1 can Black Beans (drained and rinsed)
- 1 cup Corn (fresh, frozen, or canned)
- 1 cup Cherry Tomatoes (diced)
- 1 Red Bell Pepper (diced)
- 1/2 Red Onion (diced)
- 1/4 cup Fresh Cilantro (chopped)
- Juice of 1 Lime
- 2 tbsp Olive Oil
- Salt, to taste
- 1 tsp Cumin
- 1 tsp Chili Powder
Instructions
- Prepare the Cowboy Caviar by combining black beans, corn, cherry tomatoes, red bell pepper, and red onion in a mixing bowl.
- Drizzle olive oil and lime juice over the mixture.
- Add cilantro, cumin, chili powder, and salt. Mix gently.
- Chill the Cowboy Caviar in the refrigerator for 30 minutes.
- Grill the hot dogs over medium heat for 5-7 minutes.
- Toast the buns on the grill for 1-2 minutes.
- Assemble the hot dogs in buns and top with Cowboy Caviar.
- Garnish with additional cilantro and serve with lime wedges.
