  • 1 Red Bell Pepper (diced)
  • 1/2 Red Onion (diced)
  • 1/4 cup Fresh Cilantro (chopped)
  • Juice of 1 Lime
  • 2 tbsp Olive Oil
  • Salt, to taste
  • 1 tsp Cumin
  • 1 tsp Chili Powder

Instructions

  1. Prepare the Cowboy Caviar by combining black beans, corn, cherry tomatoes, red bell pepper, and red onion in a mixing bowl.
  2. Drizzle olive oil and lime juice over the mixture.
  3. Add cilantro, cumin, chili powder, and salt. Mix gently.
  4. Chill the Cowboy Caviar in the refrigerator for 30 minutes.
  5. Grill the hot dogs over medium heat for 5-7 minutes.
  6. Toast the buns on the grill for 1-2 minutes.
  7. Assemble the hot dogs in buns and top with Cowboy Caviar.
