Instructions
- Boil the potatoes: Wash baby potatoes, place them in a pot with cold water and salt. Bring to boil, then simmer for 15-20 minutes until fork-tender.
- Prepare the dressing: Whisk together olive oil, white wine vinegar, Dijon mustard, salt, and black pepper.
- Chop the herbs: Finely chop fresh herbs of your choice.
- Drain and cool: Drain potatoes and let cool slightly. Optionally slice into halves or quarters.
- Mix it all together: In a large bowl, combine potatoes, dressing, herbs, and optional ingredients. Toss gently.
- Taste and adjust: Sample your salad and adjust seasoning to your preference.
