Ingredients
Crust:
1½ cups crushed chocolate graham crackers or Oreos
¼ cup melted butter
Cheesecake Layer:
2 (8 oz) blocks cream cheese, softened
½ cup sugar
1 egg
1 tsp vanilla extract
1 cup mini chocolate chips
Topping:
1 cup semi-sweet chocolate chips
2 tbsp heavy cream
Extra chips for garnish
Instructions
Preheat oven to 325°F (160°C). Line an 8×8 baking dish with parchment.
Mix crushed cookies and melted butter. Press into dish to form crust.
In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Fold in chocolate chips.
Pour over crust and smooth the top.
Bake for 30–35 minutes or until center is set. Cool completely.
Melt chocolate chips with cream to make ganache. Spread over cooled bars. Top with extra chips.
Chill at least 2 hours before slicing into bars.
