Description

A vibrant and flavorful salad combining sweet potatoes with smoky chipotle dressing, perfect for any occasion.


Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 12 tablespoons adobo sauce from chipotle peppers

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, smoked paprika, salt, and black pepper.
  2. Spread the sweet potatoes in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  3. Chop the cherry tomatoes, red onion, and cilantro while the sweet potatoes roast.
  4. Mix together the lime juice and adobo sauce in a small bowl.
  5. Toss the roasted sweet potatoes with the chopped veggies and dressing.
  6. Transfer the salad to a serving dish and garnish with extra cilantro if desired.

Notes

This salad can be served warm, at room temperature, or cold. It’s great on its own or as a side dish.
