- 2 large sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 1–2 tablespoons adobo sauce from chipotle peppers
Instructions
- Preheat your oven to 400°F (200°C). Toss the sweet potatoes with olive oil, smoked paprika, salt, and black pepper.
- Spread the sweet potatoes in a single layer on a baking sheet and roast for 25-30 minutes, stirring halfway through.
- Chop the cherry tomatoes, red onion, and cilantro while the sweet potatoes roast.
- Mix together the lime juice and adobo sauce in a small bowl.
- Toss the roasted sweet potatoes with the chopped veggies and dressing.
- Transfer the salad to a serving dish and garnish with extra cilantro if desired.
Notes
This salad can be served warm, at room temperature, or cold. It’s great on its own or as a side dish.
