- 2 tablespoons chipotle honey sauce
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups potatoes, peeled and cut into chunks
- 1/2 cup milk
- 4 ounces smoked gouda cheese, shredded
- 2 tablespoons butter
Instructions
- Prepare Your Ingredients: Gather all your ingredients and wash and peel your potatoes, cutting them into uniform chunks.
- Cook the Chicken Thighs: Heat oil in a skillet over medium-high heat, season chicken thighs, and sear until golden brown on both sides. Pour chipotle honey sauce over chicken, cover, and cook until internal temperature reaches 165°F (75°C).
- Rest Before Serving: Remove chicken from skillet and let it rest to redistribute juices.
- Make the Smoked Gouda Mashed Potatoes: Boil potatoes in salted water until fork-tender, drain, and return to pot. Add milk, butter, and smoked gouda, then mash until desired consistency is achieved.
- Plate and Serve: Spoon mashed potatoes onto a plate, top with chicken thighs, drizzle with additional chipotle honey sauce, and garnish with fresh herbs.
