  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 4 ounces smoked gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Prepare Your Ingredients: Gather all your ingredients and wash and peel your potatoes, cutting them into uniform chunks.
  2. Cook the Chicken Thighs: Heat oil in a skillet over medium-high heat, season chicken thighs, and sear until golden brown on both sides. Pour chipotle honey sauce over chicken, cover, and cook until internal temperature reaches 165°F (75°C).
  3. Rest Before Serving: Remove chicken from skillet and let it rest to redistribute juices.
  4. Make the Smoked Gouda Mashed Potatoes: Boil potatoes in salted water until fork-tender, drain, and return to pot. Add milk, butter, and smoked gouda, then mash until desired consistency is achieved.
  5. Plate and Serve: Spoon mashed potatoes onto a plate, top with chicken thighs, drizzle with additional chipotle honey sauce, and garnish with fresh herbs.
