Instructions
- Mix the marinade in a bowl by combining honey, soy sauce, minced garlic, olive oil, black pepper, salt, and optional dried ginger, whisking until blended.
- Prepare the chicken by rinsing the thighs under cold water and patting them dry to ensure the marinade clings properly.
- Marinate the chicken by placing it in a zip-lock bag or shallow dish, pouring the marinade over it, coating every piece, and letting it refrigerate for at least 30 minutes.
- Preheat the grill or oven to medium-high heat or 400°F (200°C) for even cooking and caramelization.
- Cook the chicken, removing it from marinade (reserving some for basting) and grilling 5-7 minutes per side, or baking for 25-30 minutes, basting halfway.
- Check for doneness, ensuring chicken reaches an internal temperature of 165°F (75°C).
- Rest the chicken for 5-10 minutes before serving to maintain juiciness.
