  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried ginger (optional)

Instructions

  1. Mix the marinade in a bowl by combining honey, soy sauce, minced garlic, olive oil, black pepper, salt, and optional dried ginger, whisking until blended.
  2. Prepare the chicken by rinsing the thighs under cold water and patting them dry to ensure the marinade clings properly.
  3. Marinate the chicken by placing it in a zip-lock bag or shallow dish, pouring the marinade over it, coating every piece, and letting it refrigerate for at least 30 minutes.
  4. Preheat the grill or oven to medium-high heat or 400°F (200°C) for even cooking and caramelization.
  5. Cook the chicken, removing it from marinade (reserving some for basting) and grilling 5-7 minutes per side, or baking for 25-30 minutes, basting halfway.
  6. Check for doneness, ensuring chicken reaches an internal temperature of 165°F (75°C).
  7. Rest the chicken for 5-10 minutes before serving to maintain juiciness.
