Ingredients
For the Chicken:
1 lb boneless, skinless chicken thighs or breasts
2 tbsp olive oil
Juice of 1 lemon
2 cloves garlic, minced
1 tsp dried oregano
½ tsp paprika
Salt & pepper to taste
For the Bowl:
2 cups cooked rice or quinoa
1 cup chopped cucumber
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
½ cup kalamata olives
Feta cheese, crumbled
Fresh parsley for garnish
For the Tzatziki Sauce:
½ cup plain Greek yogurt
¼ cucumber, grated & drained
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp fresh dill (or 1 tsp dried)
Salt to taste
Instructions
Marinate chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper for at least 30 minutes.
Grill or pan-cook the chicken until golden and cooked through. Slice.
Whisk together tzatziki ingredients in a bowl.
Assemble your bowl: layer rice, veggies, sliced chicken, feta, olives, and top with a generous spoon of tzatziki. Garnish with parsley.
