- 2 lbs Chicken Thighs
- 1 can Cherry Cola (12 oz)
- 1 cup BBQ Sauce
- 1 medium Onion, sliced
- 3 cloves Garlic, minced
- Salt (to taste)
- Pepper (to taste)
- Optional Toppings: sliced green onions, fresh cilantro, pickled jalapeños
Instructions
- Prep the chicken: Pat the chicken thighs dry with a paper towel and season with salt and pepper on both sides.
- Sear the chicken: In a large skillet over medium-high heat, add oil and sauté the chicken thighs for about 5-6 minutes on each side until golden brown.
- Add the aromatics: Remove the chicken and add sliced onion and minced garlic to the pan, sautéing for 3–4 minutes until soft.
- Combine ingredients: Return the chicken to the pan, pour in cherry cola and BBQ sauce, and stir to coat.
- Simmer the mixture: Cover the pot and reduce heat to low, simmering for 45-60 minutes until the chicken is tender.
- Shred the chicken: Remove from the pot and shred using two forks.
- Return to sauce: Put shredded chicken back in the pot and stir to mix well.
- Serve: Enjoy on buns, rice, or in tacos!
Notes
For a quicker option, use a slow cooker and cook on low for 6-8 hours or high for 3-4 hours. This dish makes excellent leftovers!
