Ingredients
• 2 lbs chicken breast, cut into 4 cutlets
• 2 tsp minced garlic
• 4 tbsp pesto
• 2 large tomatoes, sliced
• 1 cup mozzarella cheese, shredded
• Salt to taste
Instructions
Preheat oven to 400ºF (204ºC).
Place chicken cutlets in a baking dish in a single layer. Lightly salt.
Spread ½ tsp of minced garlic on each cutlet.
Add 1 tbsp pesto over each and spread evenly.
Layer 2–3 tomato slices on top.
Sprinkle ¼ cup mozzarella over each cutlet.
Bake for 22–25 minutes, or until chicken reaches 165ºF.
Let rest for 5 minutes before serving.
