- 1 package Cornbread Mix
- 1 pound Ground Beef
- 2 cups Cheddar Cheese, shredded
- 2 Eggs
- 1 cup Milk
- 1 medium Onion, diced
- 1 cup Pickles, diced
- ½ cup Ketchup
- 2 tablespoons Mustard
Instructions
- Preheat the oven to 400°F (200°C) and grab a 9×13-inch baking dish.
- Cook the ground beef in a skillet over medium heat with oil. Add the diced onion, sauté until soft, and cook until browned. Season with salt and pepper.
- Prepare the cornbread batter by combining cornbread mix, milk, and eggs in a separate bowl and whisk until smooth.
- Assemble the dish by spreading the beef-onion mixture in the baking dish, then pouring the cornbread batter over it.
- Top with shredded cheddar cheese and diced pickles, along with extra ketchup and mustard if desired.
- Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
- Cool the dish for a few minutes, then cut into squares and serve hot.
Notes
For variations, consider adding black beans for a southwestern twist or go vegetarian by using lentils instead of ground beef.
