Ingredients

  • 1 package Cornbread Mix
  • 1 pound Ground Beef
  • 2 cups Cheddar Cheese, shredded
  • 2 Eggs
  • 1 cup Milk
  • 1 medium Onion, diced
  • 1 cup Pickles, diced
  • ½ cup Ketchup
  • 2 tablespoons Mustard

Instructions

  1. Preheat the oven to 400°F (200°C) and grab a 9×13-inch baking dish.
  2. Cook the ground beef in a skillet over medium heat with oil. Add the diced onion, sauté until soft, and cook until browned. Season with salt and pepper.
  3. Prepare the cornbread batter by combining cornbread mix, milk, and eggs in a separate bowl and whisk until smooth.
  4. Assemble the dish by spreading the beef-onion mixture in the baking dish, then pouring the cornbread batter over it.
  5. Top with shredded cheddar cheese and diced pickles, along with extra ketchup and mustard if desired.
  6. Bake for 25-30 minutes until golden and a toothpick inserted comes out clean.
  7. Cool the dish for a few minutes, then cut into squares and serve hot.

Notes

For variations, consider adding black beans for a southwestern twist or go vegetarian by using lentils instead of ground beef.
