A delightful fusion of cornbread and buffalo chicken, perfect for appetizers or a main dish.


Ingredients

  • 1 package Cornbread Mix
  • 2 cups Cooked Buffalo Chicken
  • 1 cup Shredded Cheese (Cheddar or Monterey Jack)
  • 1 stalk Celery (finely chopped)
  • 1 cup Ranch Dressing
  • 2 tablespoons Butter (melted)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or butter.
  3. Combine the cornbread mix according to package instructions.
  4. Spoon 1 tablespoon of cornbread batter into each muffin tin hole.
  5. Add 2 tablespoons of cooked buffalo chicken on top of the cornbread base.
  6. Sprinkle shredded cheese over the chicken in each muffin cup.
  7. Pour more cornbread batter over cheese until cups are ¾ full.
  8. Bake for about 15-20 minutes or until golden brown.
  9. Cool in the pan before removing and serve with ranch dressing.
