Delicious Blueberry Cream Cheese Bars that blend creamy texture and sweet blueberry flavor in a buttery oat crust.

- 1 cup oat flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1/2 teaspoon salt
- 1/2 cup oats
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- Combine the oat flour, brown sugar, and melted butter until crumbly.
- Press the mixture firmly into the bottom of the prepared baking dish.
- Bake for about 10-12 minutes, or until lightly golden.
- Beat the cream cheese with the granulated sugar until smooth. Add the egg, vanilla extract, and salt; mix until combined.
- Fold in the fresh blueberries gently.
- Pour the cream cheese mixture over the crust and spread evenly.
- Bake for about 35-40 minutes, or until set.
- Cool completely in the dish before slicing into squares.
- Serve as is, or with whipped cream or powdered sugar.
Notes
These bars are best chilled in the fridge for enhanced flavor. They can also be made ahead of time and stored in an airtight container for up to a week.
