- 1 (16-ounce) box frozen pierogies (thawed but not cooked)
- Cooking oil of choice (preferably olive oil)
- 1 onion (diced)
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 pound smoked sausage (sliced)
- Kosher salt
- Pepper
- Crushed red pepper flakes
- 8 ounces fresh chopped spinach
- 5 to 6 cloves garlic (minced)
- 1 (16-ounce) jar alfredo sauce
- 1/2 cup shredded parmesan cheese
Instructions
- Preheat the grill to medium-high heat and drizzle with cooking oil.
- Toss diced onion and sliced bell peppers onto the grill, seasoning with salt and pepper, and sauté for 4-5 minutes.
- Add sliced smoked sausage and cook for another 4-5 minutes until caramelized.
- Push the mixture to the side and add minced garlic, sautéing for 30 seconds before adding spinach.
- Gently add thawed pierogies to the grill, cooking for 4-5 minutes on each side until golden and crispy.
- Stir in alfredo sauce and let simmer for 2-3 minutes.
- Finish by sprinkling parmesan cheese over the mixture until melted.
- Serve hot, optionally topping with crushed red pepper flakes.
Notes
Consider garnishing with fresh herbs and serving with crusty bread or a salad.
