Description

A delightful dish combining crispy pierogies with smoky sausage and colorful veggies, inspired by nostalgic family gatherings.


Ingredients

  • 1 (16-ounce) box frozen pierogies (thawed but not cooked)
  • Cooking oil of choice (preferably olive oil)
  • 1 onion (diced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 pound smoked sausage (sliced)
  • Kosher salt
  • Pepper
  • Crushed red pepper flakes
  • 8 ounces fresh chopped spinach
  • 5 to 6 cloves garlic (minced)
  • 1 (16-ounce) jar alfredo sauce
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Preheat the grill to medium-high heat and drizzle with cooking oil.
  2. Toss diced onion and sliced bell peppers onto the grill, seasoning with salt and pepper, and sauté for 4-5 minutes.
  3. Add sliced smoked sausage and cook for another 4-5 minutes until caramelized.
  4. Push the mixture to the side and add minced garlic, sautéing for 30 seconds before adding spinach.
  5. Gently add thawed pierogies to the grill, cooking for 4-5 minutes on each side until golden and crispy.
  6. Stir in alfredo sauce and let simmer for 2-3 minutes.
  7. Finish by sprinkling parmesan cheese over the mixture until melted.
  8. Serve hot, optionally topping with crushed red pepper flakes.

Notes

Consider garnishing with fresh herbs and serving with crusty bread or a salad.
