Description

Delicious quesadillas filled with grilled chicken thighs, gooey cheese, and a sweet-spicy hot honey BBQ sauce.


Ingredients

  • Cooking oil of choice (avocado, canola, or vegetable)
  • 1 pound boneless, skinless chicken thighs
  • Kosher salt and pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more for drizzling)
  • 2 tablespoons hot honey (plus more for drizzling)
  • 4 large burrito-size flour tortillas
  • 3 cups shredded cheese (Cheddar, Monterey Jack, or spicy queso)
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, sliced jalapeños, or guacamole

Instructions

  1. Prepare the Chicken: Heat a drizzle of oil in your Blackstone griddle over medium-high heat. Season the chicken thighs (or breasts) generously with kosher salt, pepper, and your BBQ seasoning blend.
  2. Grill the Chicken: Place the seasoned chicken onto the hot griddle and grill for about 5-7 minutes on each side until cooked through and has lovely grill marks.
  3. Shred the Chicken: Once cooked, let the chicken cool slightly, then shred the meat using two forks and toss it in a bowl with BBQ sauce and hot honey.
  4. Assemble the Quesadillas: Lay one flour tortilla on a clean surface, sprinkle shredded cheese down the center, top with BBQ chicken, drizzle with BBQ sauce and hot honey, and fold over.
  5. Cook the Quesadillas: Place the quesadilla back on the hot griddle and cook for 3-5 minutes on one side, then flip and cook for an additional 3-5 minutes until golden brown and crispy.
  6. Slice and Serve: Remove the quesadilla from the griddle, let sit for a minute, slice into wedges, and serve with additional BBQ sauce and hot honey.
