- 2 medium-sized zucchini
- 1 egg
- 3/4 cup panko bread crumbs
- 1/3 cup shredded or grated parmesan cheese

- Pepper

Instructions
- Preheat your Blackstone or griddle on medium heat.
- Prepare the zucchini by rinsing, drying, and slicing them into sticks about 1/4 inch thick.
- Create the egg wash by whisking the egg in a medium bowl until frothy.
- Mix the panko breadcrumbs, parmesan cheese, garlic powder, salt, and pepper in another bowl.
- Coat each zucchini stick in the egg wash, then dredge it in the panko mix.
- Heat a bit of cooking oil on the griddle.
- Cook the zucchini sticks for about 3-4 minutes on each side until golden brown.
- Drain the cooked zucchini on a paper towel-lined plate.
- Serve immediately with ranch or Caesar dressing if desired.
