Ingredients

  • 2 medium-sized zucchini
  • 1 egg
  • 3/4 cup panko bread crumbs
  • 1/3 cup shredded or grated parmesan cheese
  • Kosher salt
  • Pepper
  • Garlic powder (to taste)
  • Cooking oil of choice
  • Optional: ranch or Caesar dressing for dipping

Instructions

  1. Preheat your Blackstone or griddle on medium heat.
  2. Prepare the zucchini by rinsing, drying, and slicing them into sticks about 1/4 inch thick.
  3. Create the egg wash by whisking the egg in a medium bowl until frothy.
  4. Mix the panko breadcrumbs, parmesan cheese, garlic powder, salt, and pepper in another bowl.
  5. Coat each zucchini stick in the egg wash, then dredge it in the panko mix.
  6. Heat a bit of cooking oil on the griddle.
  7. Cook the zucchini sticks for about 3-4 minutes on each side until golden brown.
  8. Drain the cooked zucchini on a paper towel-lined plate.
  9. Serve immediately with ranch or Caesar dressing if desired.
