- 2 tablespoons Cooking Oil (Olive Oil)
- 1 1/2 pounds Boneless, Skinless Chicken Thighs or Breasts (cut into bite-sized pieces)
- 1 Onion (Diced)
- Kosher Salt and Pepper (to taste)
- 2 tablespoons Taco or Fajita Seasoning Blend
- 5 to 6 Cloves Garlic (Minced)
- 1 14-ounce Can Corn (Drained)
- 1 14-ounce Can Black Beans (Drained and Rinsed)
- 1 10-ounce Can Rotel Tomatoes
- 1 4-ounce Can Diced Jalapeños (optional)
- Optional Toppings: Shredded cheese, sour cream, hot sauce, cilantro, crushed tortilla chips
Instructions
- Preheat the Blackstone Griddle to medium-high heat.
- Add olive oil to the griddle.
- Sauté the chicken, seasoning with salt, pepper, and half of the taco seasoning, until golden brown.
- Add onions and garlic, and sauté until the onions are translucent.
- Integrate corn, black beans, Rotel tomatoes, and jalapeños with the remaining taco seasoning.
- Taste and adjust seasoning as necessary.
- Finish cooking for another 3-5 minutes to meld flavors.
- Plate and serve with optional toppings.
Notes
This dish can be served on its own or over rice/tortillas. Customize with preferred toppings for extra flair.
