A unique twist on traditional kunafa, these Protein Pistachio Kunafa Cups are filled with creamy cottage cheese and crunchy pistachios, all encased in crispy kataifi.
Ingredients
- Kataifi dough
- Cottage cheese
- Pistachios, crushed
- Butter
- Sugar
- Cardamom
- Honey or syrup
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the kataifi dough by thawing if frozen and fluffing it.
- Butter the muffin tin with melted butter.
- Assemble kataifi layers by tossing the dough with melted butter in a bowl.
- Form cups by pressing the buttered kataifi into the muffin tin.
- Bake for 15-20 minutes until golden brown.
- Make the filling by combining cottage cheese, crushed pistachios, sugar, and cardamom.
- Fill each cup with the cottage cheese mixture.
- Sweeten with a drizzle of honey or syrup.
- Return to the oven for an additional 10-15 minutes.
- Serve and enjoy with optional garnishes.
Notes
These cups can be prepared in advance and frozen for later use. Just ensure they’re wrapped tightly.
