Description

A unique twist on traditional kunafa, these Protein Pistachio Kunafa Cups are filled with creamy cottage cheese and crunchy pistachios, all encased in crispy kataifi.


Ingredients

  • Kataifi dough
  • Cottage cheese
  • Pistachios, crushed
  • Butter
  • Sugar
  • Cardamom
  • Honey or syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the kataifi dough by thawing if frozen and fluffing it.
  3. Butter the muffin tin with melted butter.
  4. Assemble kataifi layers by tossing the dough with melted butter in a bowl.
  5. Form cups by pressing the buttered kataifi into the muffin tin.
  6. Bake for 15-20 minutes until golden brown.
  7. Make the filling by combining cottage cheese, crushed pistachios, sugar, and cardamom.
  8. Fill each cup with the cottage cheese mixture.
  9. Sweeten with a drizzle of honey or syrup.
  10. Return to the oven for an additional 10-15 minutes.
  11. Serve and enjoy with optional garnishes.

Notes

These cups can be prepared in advance and frozen for later use. Just ensure they’re wrapped tightly.
