- 2 Grilled Chicken Breasts
- 2 Cups Mixed Salad Greens
- 1 Bell Pepper, Sliced
- 1 Onion, Sliced
- 1 Cup Corn
- 1 Cup Black Beans, Drained and Rinsed
- 1 Avocado, Diced
- 1 Cup Cherry Tomatoes, Halved
- 1/2 Cup Salsa
- 1/4 Cup Sour Cream
- Salt and Pepper to Taste
Instructions
- Grill the Chicken: Preheat your grill to medium-high heat. Season both sides of the chicken with salt, pepper, and paprika. Grill for 6-7 minutes per side or until cooked through. Let rest for 5 minutes.
- Prepare the Veggies: Slice the bell pepper and onion. In a large bowl, mix the salad greens, corn, black beans, cherry tomatoes, and sliced veggies.
- Assemble the Salad: Cube the chicken and add it to the salad. Top with diced avocado, salsa, and sour cream.
- Season and Serve: Toss gently, season to taste with salt and pepper. Serve immediately, optionally with crushed tortilla chips on the side.
