Berry Shortcake Kabobs

Description

A fun twist on the classic strawberry shortcake depicted as delightful kabobs, perfect for summer picnics and backyard barbecues.

Ingredients

  • Fresh Strawberries (or Mixed Berries)
  • Shortcake Biscuits (homemade or store-bought)
  • Heavy Whipping Cream
  • Powdered Sugar
  • Vanilla Extract
  • Skewers

Instructions

  1. Prepare the Whipped Cream: Start by pouring 1 cup of heavy whipping cream into a mixing bowl. Using an electric mixer, beat on medium-high speed until soft peaks form. Gradually add 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract, and continue beating until you reach stiff peaks—about 4-5 minutes. Set it aside in the fridge to chill.
  2. Wash and Cut the Berries: Rinse your strawberries (and any other berries) under cold water. For strawberries, remove the green tops and cut them in half or quarters depending on their size. Smaller berries like blueberries can be rinsed and used whole.
  3. Cut the Shortcake Biscuits: Slice the homemade or store-bought shortcake into roughly 1-inch cubes, similar in size to your berries.
  4. Assemble the Kabobs: Take a skewer and thread a piece of shortcake onto it. Follow with a piece of strawberry, then a dollop of whipped cream. Repeat until the skewer is filled, finishing with a piece of shortcake.
  5. Repeat and Serve: Continue with the remaining ingredients until all kabobs are assembled and place them on a serving platter.
  6. Final Touch: Just before serving, sprinkle some extra powdered sugar over the kabobs for flair.

Notes

For a fun presentation, place kabobs upright in a glass or jar. Drizzle with chocolate sauce or serve with vanilla ice cream for more indulgence.
