- 1 pound beef (sirloin or tenderloin)
- 1 bell pepper (any color)
- 1 zucchini, sliced into rounds
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Marinate the beef cubes by mixing olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a bowl. Toss the beef until coated and let sit for at least 30 minutes.
- Prep the veggies by cutting the bell pepper, zucchini, and red onion into bite-sized pieces.
- Assemble the kabobs by alternating threading beef with the veggies and cherry tomatoes on skewers.
- Preheat the grill to medium-high heat, or preheat the oven to 400°F (200°C).
- Grill the kabobs for 2-3 minutes on each side until charred and beef is cooked to desired doneness (about 145°F for medium rare).
- Let the kabobs rest for a few minutes before serving.
- Serve immediately, garnished with fresh herbs or extra lemon juice, and enjoy!
Notes
Feel free to experiment with different vegetables or marinades to suit your taste. For a spicy kick, consider adding cayenne pepper to the marinade.
