Ingredients

  • 1 pound beef (sirloin or tenderloin)
  • 1 bell pepper (any color)
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Marinate the beef cubes by mixing olive oil, lemon juice, oregano, garlic powder, salt, and pepper in a bowl. Toss the beef until coated and let sit for at least 30 minutes.
  2. Prep the veggies by cutting the bell pepper, zucchini, and red onion into bite-sized pieces.
  3. Assemble the kabobs by alternating threading beef with the veggies and cherry tomatoes on skewers.
  4. Preheat the grill to medium-high heat, or preheat the oven to 400°F (200°C).
  5. Grill the kabobs for 2-3 minutes on each side until charred and beef is cooked to desired doneness (about 145°F for medium rare).
  6. Let the kabobs rest for a few minutes before serving.
  7. Serve immediately, garnished with fresh herbs or extra lemon juice, and enjoy!

Notes

Feel free to experiment with different vegetables or marinades to suit your taste. For a spicy kick, consider adding cayenne pepper to the marinade.
