One rainy afternoon, I combined leftovers into this beauty — and wow, it’s been a family favorite ever since. BBQ chicken meets gooey cheese between crispy golden bread… it’s comfort food with a smoky, tangy kick. Perfect for lunch or a cozy dinner, this grilled cheese will have everyone asking for seconds.
Ingredients
1 cup cooked shredded chicken
1/4 cup BBQ sauce
4 slices sourdough or thick sandwich bread
1 tablespoon butter (softened)
1/2 cup shredded mozzarella
1/2 cup shredded cheddar
Optional: red onion slices or pickled jalapeños
Instructions
Mix shredded chicken with BBQ sauce.
Butter one side of each bread slice.
On the unbuttered side, layer mozzarella, BBQ chicken, cheddar, and optional extras.
Top with the second slice of bread, buttered side out.
Cook on a skillet over medium heat for 3–4 minutes per side until golden and melty.
Let rest 1 minute, slice, and enjoy that cheesy stretch!
