Description

A creative summer treat that combines the sweetness of watermelon with the savory flavors of bacon, BBQ sauce, and ranch dressing.


Ingredients

  • 1 large watermelon
  • 8 slices of crispy bacon
  • ½ cup BBQ sauce
  • ½ cup ranch dressing
  • Fresh cilantro (for garnish)
  • Black pepper (to taste)

Instructions

  1. Cut the watermelon in half lengthwise to create two sturdy “boats.” Make sure you have a stable base by slicing off a little bit from the bottom if they wobble.
  2. Scoop out the inside using a melon baller or spoon, leaving about half an inch around the edges.
  3. Crisp up the bacon in a frying pan over medium heat for about 4-5 minutes per side until crispy. Drain on paper towels.
  4. Chop the cooked bacon into small pieces.
  5. Mix the chopped bacon with BBQ sauce and ranch dressing in a bowl.
  6. Fill the hollowed-out watermelon halves with the BBQ bacon ranch mixture.
  7. Garnish with chopped cilantro and a dash of black pepper.
  8. Refrigerate for about 30 minutes if desired.
  9. Slice and serve the watermelon boats on a platter.
