- 1 large watermelon
- 8 slices of crispy bacon
- ½ cup BBQ sauce
- ½ cup ranch dressing
- Fresh cilantro (for garnish)
- Black pepper (to taste)
Instructions
- Cut the watermelon in half lengthwise to create two sturdy “boats.” Make sure you have a stable base by slicing off a little bit from the bottom if they wobble.
- Scoop out the inside using a melon baller or spoon, leaving about half an inch around the edges.
- Crisp up the bacon in a frying pan over medium heat for about 4-5 minutes per side until crispy. Drain on paper towels.
- Chop the cooked bacon into small pieces.
- Mix the chopped bacon with BBQ sauce and ranch dressing in a bowl.
- Fill the hollowed-out watermelon halves with the BBQ bacon ranch mixture.
- Garnish with chopped cilantro and a dash of black pepper.
- Refrigerate for about 30 minutes if desired.
- Slice and serve the watermelon boats on a platter.
