Ingredients

- 1 large cucumber
- 300 g frozen shrimp
- 1 large avocado
- Juice of 1 lemon
- Parmesan cheese (to taste)
- Salt (to taste)
- Thyme (to taste)
- 1 clove of garlic
- Fresh parsley (for garnish)
Instructions
- Thaw the shrimp in a bowl of cold water for 15-20 minutes until fully thawed.
- Heat olive oil in a skillet over medium-high heat and sauté the shrimp for 2-3 minutes on each side until pink and opaque.
- Mash the avocado in a bowl and mix in lemon juice, thyme, salt, and pepper.
- Cut the cucumber into 1-inch thick rounds.
- Assemble by adding a dollop of the avocado mixture on each cucumber slice topped with a cooked shrimp.
- Serve fresh on a platter, optionally garnished with parmesan cheese and parsley.
