Ingredients

  • 1 large cucumber
  • 300 g frozen shrimp
  • 1 large avocado
  • Juice of 1 lemon
  • Parmesan cheese (to taste)
  • Salt (to taste)
  • Thyme (to taste)
  • 1 clove of garlic
  • Fresh parsley (for garnish)

Instructions

  1. Thaw the shrimp in a bowl of cold water for 15-20 minutes until fully thawed.
  2. Heat olive oil in a skillet over medium-high heat and sauté the shrimp for 2-3 minutes on each side until pink and opaque.
  3. Mash the avocado in a bowl and mix in lemon juice, thyme, salt, and pepper.
  4. Cut the cucumber into 1-inch thick rounds.
  5. Assemble by adding a dollop of the avocado mixture on each cucumber slice topped with a cooked shrimp.
  6. Serve fresh on a platter, optionally garnished with parmesan cheese and parsley.
