- 1 cup Heavy Cream or Full-Fat Coconut Milk
- 1/2 cup Granulated Sugar
- 4 Egg Yolks
- 1 tsp Pure Vanilla Extract
- Seasonal Toppings (Whipped Cream, Caramel)
Instructions
- Preheat your oven to 325°F (160°C) and prepare a water bath.
- Combine the heavy cream, pumpkin purée, sugar, and spices in a saucepan over medium heat.
- Whisk together the egg yolks and vanilla extract in a separate bowl.
- Pour the warm cream mixture into the egg yolks gradually while whisking.
- Strain the mixture through a fine mesh sieve into a large measuring cup.
- Divide the mixture among ramekins and place them in the water bath.
- Bake for 30-35 minutes until just set but still jiggly.
- Chill in the refrigerator for at least 4 hours or overnight.
- Sprinkle sugar on top and caramelize using a kitchen torch or under a broiler.
- Serve with whipped cream and caramel sauce.
Notes
Allow flavors to meld overnight for the best results. Use a gentle hand while caramelizing the sugar to avoid burning.
