- 2 cups Powdered Sugar

Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Combine the dry ingredients with the butter mixture, alternating with buttermilk.
- Scoop portions of batter onto baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until lightly pressed tops spring back.
- Prepare the cream filling by beating heavy cream until stiff peaks form, then adding powdered sugar.
- Assemble the pies by piping filling onto half the cookies, topping with the other halves.
