  • 2 cups Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Combine the dry ingredients with the butter mixture, alternating with buttermilk.
  6. Scoop portions of batter onto baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until lightly pressed tops spring back.
  8. Prepare the cream filling by beating heavy cream until stiff peaks form, then adding powdered sugar.
  9. Assemble the pies by piping filling onto half the cookies, topping with the other halves.
