Instructions
- Cook the gnocchi by boiling salted water, adding the gnocchi until they float, about 2-3 minutes. Drain and set aside.
- Sauté the garlic in olive oil over medium heat for about 30 seconds until fragrant.
- Add the diced tomatoes and bring to a gentle simmer for about 5 minutes.
- Pour in the heavy cream and stir, cooking for another 3-5 minutes until the sauce thickens slightly.
- Combine the cooked gnocchi with the sauce, seasoning with Italian seasoning, salt, and pepper.
- Serve in bowls, garnishing with fresh basil.
Notes
For a lighter version, substitute heavy cream with half-and-half or a plant-based cream. Try adding veggies like spinach for added nutrition.
