Ingredients
• 3 large eggs
• 3/4 cup vegetable oil
• 1 2/3 cups packed brown sugar
• 2 cups grated zucchini (squeeze out excess moisture)
• 2 tsp vanilla extract
• 3 cups all-purpose flour
• 3 tsp ground cinnamon
• 1 1/2 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 1/2 cup raisins
• 1/2 cup chopped walnuts
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9×5” loaf pans.
In a large bowl, whisk eggs, oil, and brown sugar until smooth.
Stir in zucchini and vanilla.
In another bowl, combine flour, cinnamon, baking powder, baking soda, and salt.
Gradually add dry ingredients to the wet mixture; stir until just combined.
Fold in raisins and walnuts.
Divide batter between prepared pans.
Bake for 50–60 minutes or until a toothpick comes out clean.
Cool in pans for 10 minutes, then transfer to wire racks.
