- Gather Your Tools: First things first, grab a mixing bowl, a spatula, and a zesting tool, because we’re going to make some magic happen!
- Combine Dry Ingredients: In your mixing bowl, combine 1 1/4 cups of almond flour and 1 cup of unsweetened shredded coconut. Stir them together gently—they’re like best friends meeting for the first time!
- Mix in Sweetness: Add 1/4 cup of honey (or maple syrup) to your dry ingredient blend. At this point, I like to use a spatula to fold in the honey. It may be a bit sticky, but trust the process!
- Zesty Burst: Now, add in your superstar—2 tablespoons of fresh lemon zest, 3 tablespoons of fresh lemon juice, and 1 teaspoon of vanilla extract. Pro tip: Make sure to zest and juice the lemons before you begin so that all your flavors meld beautifully together—freshness is key!
- Stir in your 1/8 teaspoon of turmeric and a pinch of salt. Once mixed, your dough should be nice and cohesive, but if it feels too crumbly, add a splash more lemon juice to help bind.
- Roll the balls! Use your hands to scoop a tablespoon of mixture and roll it into a ball. The size is entirely up to you. A tablespoon size is just right because they’re perfectly bite-sized!
- Coat in Coconut: Once rolled, gently roll each ball in extra shredded coconut for that delightful outer layer.
- Chill Out: Place your rolled bliss balls on a parchment-lined tray and pop them in the fridge for at least 30 minutes. This helps them firm up and enhances their flavor.
