2 tsp chili powder
Salt and black pepper, to taste
Dressing
½ cup sour cream
2 garlic cloves, minced
1 tsp paprika
1 tsp lime zest, grated
Rice Bowls
4 cups cooked basmati rice
2 (15 oz) cans whole kernel corn, drained and rinsed
½ cup feta cheese, crumbled
Garnish
½ cup cilantro, chopped
1 lime, cut into wedges
Instructions
Cook the Chicken: In a bowl, combine diced chicken with olive oil, paprika, garlic powder, cumin, chili powder, salt, and pepper. Cook in a skillet over medium heat for 8–10 minutes, until browned and fully cooked.
