- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced

- 1 teaspoon chili powder
- Salt and pepper to taste

Instructions
- Preheat Your Oven: Set your oven to 375°F (190°C).
- Prepare the Peppers: Slice the tops off each bell pepper and remove seeds and membranes.
- Sauté the Aromatics: Heat olive oil in a skillet, add onions and sauté until translucent, then add garlic.
- Mix in the Filling: Combine cooked rice, beans, corn, tomatoes, cumin, chili powder, salt, and pepper.
- Stuff the Peppers: Spoon the filling into each bell pepper, packing tightly.
- Bake Them Up: Cover with foil and bake for about 25 minutes, add cheese, then bake for another 10-15 minutes.
- Garnish and Serve: Sprinkle with parsley before serving.
