Ingredients
Dressing:
1/3 cup avocado oil (or vegetable oil)
1/3 cup seasoned rice vinegar
Juice of 1 lime
3 cloves garlic, minced
1/4 tsp garlic powder
1 tsp salt (adjust to taste)
1 tsp white sugar
1 ¼ tsp ground cumin
1 tsp smoked paprika
1/2 tsp chipotle pepper (or to taste)
Caviar:
2/3 cup finely diced red onion
1 ½ cups diced fresh bell peppers
1/3 cup diced roasted red peppers (jarred)
1/3 cup diced pickled jalapeños
1 can (15 oz) black beans, rinsed
1 can (15 oz) black-eyed peas, rinsed
2 cups frozen corn
1 cup diced fresh tomato
1/2 cup chopped fresh cilantro
Scoop-style tortilla chips (for serving)
Instructions
In a large bowl, whisk together all dressing ingredients until well combined. Adjust seasonings to taste.
Add all caviar ingredients to the bowl with the dressing.
Gently toss everything together until evenly coated.
Chill for at least 30 minutes to let the flavors meld.
