Description

A refreshing and flavorful Tzatziki Chicken Salad that combines crisp textures with tangy yogurt dressing, perfect for meal prep or casual gatherings.


Ingredients

  • 2 cups Shredded Chicken (rotisserie, boiled, or grilled)
  • 1 cup Greek Yogurt
  • 1 cup Cucumbers (sliced)
  • 1/2 cup Red Onion (sliced)
  • 1/4 cup Lemon Juice (fresh)
  • 2 cloves Garlic (minced)
  • 1/4 cup Fresh Herbs (Dill and Parsley, chopped)
  • Salt and Pepper to taste

Instructions

  1. Shred the chicken using two forks until it’s in desired size.
  2. Prep the cucumbers and red onion, slicing them as preferred.
  3. Mix one cup of Greek yogurt with lemon juice and minced garlic in a large bowl until smooth.
  4. Incorporate shredded chicken, cucumbers, and red onion into the yogurt mixture and fold gently.
  5. Season with fresh dill, parsley, salt, and pepper to taste.
  6. Let the salad chill in the refrigerator for about 30 minutes.
  7. Plate the salad in bowls or on a platter, garnishing with more herbs and drizzle of olive oil before serving.
