  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ teaspoon Paprika
  • ½ teaspoon Chili Pepper
  • 1 Chicken Seasoning Cube
  • ½ teaspoon Salt
  • Turkey Bones and Skin
  • A Handful of Chopped Onion
  • 1 Carrot (sliced)
  • 2 Cloves Garlic (minced)
  • Half a Thumb-sized Piece of Ginger (grated)
  • 3 Cups Water
  • ½ Red Bell Pepper
  • ½ Green Bell Pepper
  • Red Bell Peppers
  • 2 Large Tomatoes
  • 1 Habanero
  • 3 Cups Rice
  • 1 Cup Turkey Broth
  • 1 Cup Water
  • Pinch of Salt
  • 1 Tablespoon Oil (for frying the turkey)
  • Onion (for sautéing)
  • 2 Cloves Garlic (minced)
  • Pepper Mix (½ teaspoon salt, 1 chicken seasoning cube, 1 teaspoon paprika)

Instructions

  1. Prep Your Turkey: Start by washing your turkey thighs thoroughly. Pat them dry and season generously with garlic powder, onion powder, paprika, chili pepper, and a pinch of salt. Let marinate for at least 15 minutes.
  2. Sauté the Aromatics: In a large pot, heat about 1 tablespoon of oil over medium heat. Toss in your chopped onion and let sauté for 2-3 minutes until translucent.
  3. Brown the Turkey: Add the turkey thighs to the pot, skin-side down, and brown for 5-7 minutes until golden crust forms. Flip and brown the other side for an additional 5 minutes.
  4. Create Your Broth: Once browned, add chopped onions, carrots, minced garlic, grated ginger, and your chicken seasoning cube. Pour in 3 cups of water and cover. Simmer for 30 minutes on low heat.
  5. Add Vegetable Power: Add in your bell peppers, tomatoes, and sliced habanero after 30 minutes and stir well.
  6. Cook the Rice: Rinse your rice under cold water until clear. Add rice to the pot with 1 cup of turkey broth and 1 additional cup of water. Stir and tuck turkey thighs back in.
  7. Simmer to Perfection: Cover and bring to a boil on high, then reduce to low. Simmer for 20-25 minutes or until rice is cooked through and absorbed the broth.
  8. Fluff and Serve: Once done, remove pot from heat and let sit for 5 minutes. Remove turkey thighs and fluff the rice before serving.

Notes

Garnish with fresh herbs and serve with a light salad or crusty bread.
