Ingredients
Chocolate Cake Layers:
4 oz semi-sweet chocolate, chopped
¼ cup Dutch-process cocoa powder
½ cup boiling water
2 cups all-purpose flour
¾ tsp baking soda
12 tbsp unsalted butter, softened
1 cup granulated sugar
¾ cup packed light brown sugar
¾ tsp salt
4 large eggs
1 tsp vanilla extract
¾ cup sour cream
Coconut Pecan Frosting:
2 cups heavy cream or evaporated milk
2 cups granulated sugar
6 egg yolks
1 tsp salt
1 cup unsalted butter
2 tsp vanilla extract
2 cups toasted pecans, chopped
4 cups toasted sweetened shredded coconut
Instructions
Preheat oven to 350°F (175°C). Grease and line 3 cake pans.
Mix chocolate, cocoa, and boiling water until smooth. Cool.
Cream butter and sugars. Add eggs, vanilla, then sour cream.
Blend in dry ingredients and chocolate mixture. Divide batter into pans.
Bake 25–30 mins. Cool completely.
